Each agave rests for a full year to enhance its flavors, and we meticulously remove all leaves to prevent any bitterness. While many opt for commercial yeasts, we choose a path less traveled.
Our yeasts are sourced directly from the local landscape, capturing the unique essence of our fields’ environment.
