OUR PROCESS

TIME IS OURGREATEST RESOURCE

We use mature organic Agaves and time our harvest to maximize the concentration of sugars in each plant. These are left to lay for one full year before harvesting to further concentrate the sugars. We trim all of our piñas to perfection, so there are no remnants of leaves, which if left, can impart a bitter taste in the Mezcal.

While some Mezcaleros use shelf bought yeasts, at MAL MEZCAL, our yeasts are sourced from a local microbiome itself, as one further expression of the local terroir and microclimate specific to our fields.

Our Maestros Mezcaleros work meticulously to ensure that the botanical essences of our hand selected Agave are in no way overpowered by raw smoke, but remain center stage to the drinking experience. The botanical freshness sets MAL MEZCAL apart from anything that has been offered before.

We use Agave Angustifolia, Agave Cupreata, and Agave Salmiana, in different percentages, depending upon the local harvest. Every harvest is different, every bottle has a unique touch. That touch you may ask, is a splash of a fourth agave, kept secret, that is the genius in the final product.

Starting in the land of none, isolated and remote, at the most northwestern quadrant of the state of Oaxaca, is the land of Mal Mezcal, a region known as the Mixteca Highlands.

The Mixteca also boasts one of the richest faunas in Mexico, itself is one of the most biodiverse areas on the planet. While nearly all Oaxacan production of Mezcal occurs in the central valleys surrounding the city of Oaxaca, Mal Mezcal is born 4,921 above the sea level in a highly rich land. Having over 25 different fields and focusing on smaller, individual plots allows us to cater different combinations of agave. Matching the terroir and the local climatic conditions help us achieve the optimal requirements of the individual Agave species…
